Like most people, I’m often in a rush to get out the door in the morning. But I’m not a fan of eating take out (not every day anyway…) nor do I enjoy skipping meals, so this is what I’ve found works great for me. Maybe it will for you too!
I simply blend up a smoothie right before or after I make my breakfast, pour it in a glass storage container, stick it in the freezer and voila. Lunch is ready! I just grab it as I’m walking out the door, stick it in the freezer once I get to work, and by the time lunch rolls around I have a delicious, perfectly balanced lunch ready to eat. No starving and no grabbing for unhealthy convenience foods. Yay!
I make my smoothie bowls different all the time based on what I have at the moment or what I’m craving, but this is one of my favorites when I’m craving sweet.
PINK PITAYA SMOOTHIE BOWL
Serves: 1 Prep Time: 10 minutes Cooking Time: 0 minutes
INGREDIENTS
- ½ cup unsweetened coconut yogurt (I like vanilla, but plain works too)
- ½ scoop plain or vanilla vegan protein powder
- 1 unsweetened frozen pitaya packet
- 5 or 6 frozen steamed zucchini cubes
- ½ (about 50g) frozen banana slices
INSTRUCTIONS
Add everything to a high-powered blender and blend until smooth, scraping down the sides as necessary. Top with desired ingredients.
