Super Quick Acai Bowl

So…it seems like you can get an acai bowl pretty much anywhere here in L.A., which is AWESOME, but not always the healthiest since most places add extra sugar in the form of honey or agave, tons of fruit, ZERO veggies, and gobs of nut butter – not just to top, but also in the smoothie itself. Sure, they taste great, but they’re also mega calorie bombs – upwards of 1000 calories per bowl!!!

Here’s how I make my super delicious, super quick, and HEALTHY acai bowl. My secret? Yep. Frozen steamed zucchini cubes. It adds the perfect amount of bulk and fiber with no taste whatsoever. And it won’t leave you feeling sluggish, tired, bloated, or guilty. Yay! I like to top mine with nut or seed butter, or sometimes just nuts or seeds in their whole form, but I don’t add any to the smoothie itself. This saves a tremendous amount of fat and calories and still tastes SUPER DELICIOUS!

 

SUPER QUICK AÇAI BOWL

Serves: 1   Prep Time: 10 minutes   Cooking Time: 0 minutes

INGREDIENTS
  • 5 or 6 frozen steamed zucchini cubes
  • 4 to 5 ounces unsweetened coconut yogurt, plain or vanilla
  • ½ scoop plant based protein, plain or vanilla
  • 1 frozen, unsweetened acai packet
  • ½ to ¾ cup frozen berries
INSTRUCTIONS

Add everything to a high-powered blender and blend until smooth. Voila! Scrape down the sides and use the tamper as necessary. Transfer to a bowl and top with whatever you please.

Suggested toppings: raw cacao nibs, nut or seed butter, unsweetened coconut flakes, raw pepitas, crushed Brazil nuts, etc.

One more thing – I know that frozen banana is the go-to for smoothies and smoothie bowls since it adds that perfect amount of creaminess, but you honestly don’t need any – not even half of one in this recipe. Try it for yourself. You won’t be let down, I promise. Oh, and it’s the perfect food for before or after yoga! In fact, if hot yoga is your thing (not mine, but hey, to each his own), this would be A-MAZE-ING after a long, hot sweaty vinyasa sesh.
