Sometimes you just need something cold. Something naturally sweet that’s as delicious as ice cream but loaded with nutrients. Something that you enjoy eating almost as much as it makes you feel good on the inside. What could be better than that?
I’ve been having some serious gut problems. I’ve been wanting to incorporate more raw foods into my diet, not just raw, but blended ingredients to give my gut a bit of a break from having to digest so much food all the time. Smoothies are so delicious, but I’m always afraid to order them in restaurants because they tend to add tons of unnecessary sweeteners, WAY TOO MANY calorie-dense toppings (granola, chocolate, etc.) and so much fruit that it’s just over the top full of sugar – even if it is natural.
This is my version (or one anyway) of a delicious açai bowl that has some healthy plant-based protein and omega-3 fatty acids to slow the rate at which the carbohydrate from the fruit enters the blood stream. Adding these healthy proteins and fats helps reduce the mega spike in insulin that would occur without them. The protein and fatty acids add other health benefits too such as helping to build and maintain lean muscle mass, reduce inflammation and support healthy cognitive function. Oh, and they add some major deliciousness too.
AMY’S AWESOME AÇAI BOWL
Prep Time: 5 minutes Cook Time: 0 minutes Total Time: 5 minutes Makes: one smoothie bowl
- 1 medium very ripe banana (I blend half and use the other half for topping)
- 1 cup unsweetened vanilla coconut yogurt (I like So Delicious brand)
- 1 cup frozen mixed berries
- 1 unsweetened frozen açai packet
- 1 serving chocolate or vanilla plant-based protein (Vega is yummy)
- 3 Brazil nuts, chopped
- ½ teaspoon hemp seeds
- 1 teaspoon shredded unsweetened coconut
- 1 teaspoon nut or seed butter
Add all ingredients (except the toppings) to a high speed blender or food processor and blend until smooth. Transfer to a serving dish and top with desired toppings. Enjoy!
